A Family Legacy
In the 1970s, Moni Kaba came to the United States via way of Italian kitchens. He quickly learned that people in the Southwest had an appetite for East Coast Italian food. Moni oversees many Italian restaurants in the Dallas area today, and his family sold Moni's OKC to John and Rachel Foster. Rachel, classically trained in French cuisine, saw an opportunity to further her skill set. John saw an opportunity to learn more about the world of business. Chef Rachel is depicted in the Moni's OKC kitchen in the painting by renown OKC Artist Marita Walizer.
The first few years were a learning experience. John and Chef Rachel inherited a staff of 7 and hit the ground running. For every success there seemed to be a mistake. Chef Rachel adopted the motto of "better, every day." The Fosters together worked on 4 pillars as the staff and customer base grew: excellence, communication, flexibility, and teamwork. As sales started to climb, media attention grew, and wait times on busy nights grew to be hours instead of minutes. The Fosters decided that expansion was the next step.

Moni's now seats up to 180 guests and has a full bar, patio, Chef's Table, and robust carry-out business. Chef Rachel continues to hone her craft and train her staff in the kitchen while John handles service and business management. With a talented and growing team of leaders, the Fosters are pursuing excellence in every aspect of Moni's.
